Grilled Vegetable Capachio Recipe

50 gm lettuce-cleaned, washed & broken
15 gm grilled onion rings
25 gm tomatoes-grilled & sliced
15 gm green capsicum rings-grilled
15 gm yellow capsicum rings-grilled
15 gm red capsicum rings-grilled
30 gm aubergine-sliced & grilled
30 gm cheddar cheese-sliced
25 ml olive oil
juice of 1 1/2 lemons
15 gm basil leaves
2 gm milled pepper powder
salt to taste
20 gm walnuts-roasted & crushed
- In a bowl, add olive oil, lemon juice, salt, pepper and roasted walnut. Mix well, season to taste.
On a platter, pile crisp lettuce in the centre. Layer the grilled vegetables around it.
Place cheese slices next. Drizzle the dressing over the top.
Serve garnished with milled pepper.
